6N2 GTi dropped ~40mm. No arch work.

Will 16 x 7.5 et 20 with 195/40's fit? The offset is quite low I dont want them to be illegal.

What about 16 x 7 et 40 with 195/40's? This offset its a bit higher than the standard 35, will they clear my standard GTi breaks?

the first set will fit fine, the 2nd set the offset is a bit higher, i dont know if 2mm will make a lot of difference, but you could buy some 20mm spacers and they'll be fine

Where does the 2mm come from? I though the et was measured in mm? So the difference between 35 and 40 would be 5mm? Maybe I'm wrong...

16 x 7.5 et 20 will rub if your too low! 40mm you will most probly get a bit of rubbing if cornering hard or on bumpy roads!
