I've chopped the scuttle out of my Polo which has the VIN plate/stamp on. Is it okay to make up your own VIN plate and stick it on near there. All the other markings from factory are on the car and obviously the numbers will match. Just wondering if making my own plate is likely to get me into more trouble than chopping mine out and not replacing it.

i would just cut out the bit with the number on and rivet it on somewhere near the original position. Can't see there being a problem as it's the proper number for the shell. Welding it into a different shell would be a bit dodgy.
