what tyres would people recomend, the car will be spiritedly driven up and down alpine roads a couple of times a week.......

what would studded tyres do for handling on wet/dry tarmac rather than real tyres

they do not need to be any good in the dry, I've got my dry tyres for that

Studded tyres will wear out very quickly on tarmac & handle rubbish

if i have chains I've forra to take them off everytime there isnt snow on the road, the car is a toy more than a method of transport.

For the Polo?

I'd get some Blizzaks in 155/70-13 (Bridgestones) or Yokohama Winter-Ts

I ran Winter-Ts on my first Polo through a quite snowy period (albiet in a 14" variety) and the only reason I didn't keep using them in the dry is because they were wearing so quickly. Definately considering some for the Saxo.

Do not use chains. They are an emergency device to dig you out of the deep stuff, not a long distance fit and forget. Nokian make the best road car winter tyres although any of the quality European makes will do the job. I like Uniroyals when I in the mood for spending real money. Use a similar size to whatever is fitted now.

As someone stated earlyer there are plenty of rally/grasstrack/shale tyres around that will perform well. What size are your rims?

Having tried most of the common ones, I can say that for mainly road use I'd go with the stuff the locals will be using. Forest tyres are not rated for ice use and the rubber feels like leather at around zero degrees. The ice tolerant compounds are only good for 6 months before they degrade to the normal level and are usually special order only. That said, Colway do a range of winter tyres which may be OK. The motorsport Colways and Maxsports, which are supposed to be good in snow aren't, although they are better than normal road tyres. Unfortunately, since I fitted my LSD, it's not snowed so I haven't had chance to try out the Kumho's I got cheap. Fingers crossed for this winter.

I was reading the Polo handbook. (I have a 52 plate 1.9 TDi) and it says that only a few tyres can have snow chains fitted.

I have 195/55/15 Pirelli tyres atm and the snow chains for them are in the post, why would I not be able to use snow chains on them? They are not low profile tyres and although it has sports suspension there is plenty of room between tyre/arch.
