Polo 1.05L mk2 - how much oil for oil change?

I'm not a noob, and I have done probably literally hundreds, if not pushing a thousand oil changes, so WTH can't I change the oil on a stupid 1.05L mk2 polo engine??? Am I missing something? Help!

Drained the oil, replaced the filter.

I put in about 3L of oil, nothing registered on the dipstick.

I put in 1L more, suddenly it's way over high mark on the dipstick. 'Okay', i think, 'it's just a really small amount between the marks'.

So I drained 1/2L, but there's no change to the level!

How much is the capacity for a oil change? The stupid Haynes manual doesn't list it, and I can't seem to find it anywhere online.

Is this a known issue with the dipsticks being hard to read? Even if I clean it perfectly, it still comes back out covered in oil, with lots all the way up the stick, even if I have let it settle for hours.

If it's an early mk2 the dipsticks are terrible. I can never read mine. 3.5 Litres is about right for a change.

Yes, it's a 82 so about as early as you can get. I guess i'll just guess it back to 3.5L and hope for the best. Thanks.

I cannot believe how hard it is to read the dipstick!
