Could the temperature gauge be used for either oil or water temp?

I dont see why not. There is a length of wire on the back of the gauge with a metal probe/sensor on the end.

I can get a pic if you desire?

Any idea where you plug an oil temp sensor in? I think oil pressure can be plugged into the back of the head above the spark plugs on a GT engine, but no idea about oil temp.

Maybe I'm being a bit retarded here, but if you have a sensor in the sump plug surely its rather vulnerable and likely to be damaged by stones flicked up off the road etc? Especially as the sump plug faces forwards on old Polos.

Maybe the sensor sits entirely inside the sump to protect it?

It would be no more damaged than the wiring off the alternator etc.
