having this problem where my engine is shuddering now and again usually on a cold start can understand it.... it is the same kind of this as you get when u hose down your engine (obviously i haven't done that) what would cause this? could it be spark plugs? any help appreciated.

It sounds like a misfire, this could be caused by, as you say, spark plugs (I recommend genuine VW plugs), plug leads or a faulty distributor cap. ( if you change that, treat it to a new rotor arm as well).

There are other possibilities, but you have to start somewhere and the above items are not too expensive and may be ready for changing anyway.
