Steering wheel is easy. Aftermarket boss with aftermarket wheels. You pick and decide what you like.

Other VW steering wheels fit if they have the same spline as yours. I think the mk2 coupe S steeing wheel is awesome in the mk3 as a simple, cheap change but mk2/mk3 polos seem to randomly have large or small spline fitment. If yours is large spline you would need a spline puller to be able to fit a small spline wheel.

mk1, mk2, mk3 polo seats are interchangable. If your car is not a GTor G40 then GT/G40 seats offer a nice bolstered upgrade as do some seats from the mk2 coupe S (early ones are still non bolstered iirc though). Mk2 golf seats fit straight in but sit higher than the standard polo seats. Corrado seats also fit straight in and sit very nice and low in a polo (best front seats for a mk3 polo). Issue is the backs don't fit without a lot of pissing around swapping foam and cloth onto different bases etc. Bucket seats etc can be bought and frames are available to fit them but they aren't cheap and often overkill for a mk3 polo. Pretty much any seats from any car can be fitted if you are a dab hand with a welder and do a bit of measuring.

Headlining I'm a mk3 is either light headlining (which is shitty looking and often dirty) or black. Black looks awesome and if you have black and it is not damaged then i wouldn't do anything with it. To remove and refit the headlinging properly the rear windows need to be pushed out and also where it fits in at the back the headling often goes brittle and is very hard to remove without damaging. Takes a foooking long time to change a headlining correctly and probably near impossible as a one man job.

Carpets and parcel shelves are either light grey or black and you can get black carpets and shelves on here, ebay, scrappys. Doorcards come in a range of different colours. GT/genesis ones are black and look better than the lighter ones (G40 are dark and have little spots on to match the seats).

Other than that it is all down to your imagination and skills. Get stuff trimmed, painted. etc etc.

Best with these old cars to make the best of what they came with originally. Usually the darker interiors are more sort after and look the best.
