I am about to weld a nut to my exhaust for the lambda to fit into (I'm doing a mk1 golf conversion) and need to know how deep the probe part of the sensor needs to sit into the exhaust tubing? anybody know or know where i can find out, it is a polo gt engine.

If you weld the nut to the outside of the manifold, you are replicating the existing mounting.

I am using the mk1 manifold by the way, do you mean just weld the nut flush to the tubing and that is how a polo manifold would be?

Yes. Why use the Golf manifold though? I have the Polo manifold and a GTi system. You need to remove the cat and then add a straight bit of pipe to fill the gap. I can take some pictures if it helps.

because I haven't got a polo manifold, I'm just trying to get the engine in and running and develop from there on. I believe the lambda hole is just before where the cat would of been is that right?

Good reason Mine came with the engine. The lambda will sit a couple of inches past the driveshaft so that the cable can go straight up the bulkhead or up the side of the rear mount.
