this may sound stupid but I'm wanting to lower my mk3 and was thinking of just getting lowering springs. Does this work? Is it an effective way of doing it? and also will this give the effect that when the car gets lifted that the spring will ''fall out''?

You can drop it 40mm on standard shocks, after that you'll start getting the falling out of the cups that you mention, also you can get issues with the dampers bottoming out if you go much lower than that.
