I'm not wanting to start a thread about whats your favorite way to burn beans on toast with 16oz of cheese on top cause thats amazing when your pissed.

I'm talking about serious cooking.

I really enjoy cooking decent food and do it everyday, not because I don't like cheap 'ding' meals or frozen chips (I do in fact enjoy a bit of rubbish every now and again) and it's not because i'm some major health freak that doesn't touch this or that because it has 0.5g saturated fat. Basically I enjoy eating tasty food and that doesn't usually happen when it's prepared by a factory (there are definitely some exceptions)

Basically I thought it would be nice to see if anyone else was into making some really nice food. Would be cool if you could post up links or recipes for food that you have made that you thought was amazing.

Anything goes so long as you have made it yourself.

I'll get the ball rolling with a link to a dish that I made a while ago and find myself making it all the time. It's a risotto but the only difference I made was to add lemon juice at the end which helps cut through the richness.

If your not interested then don't comment. Do you even know what Risotto is? do you even cook or are you just a microwave magicition?

I'm not interested in hearing peoples dismissive comments.

I like to think I can cook but I can't really. I do try though.

Few years ago I got really into curries, made all sorts from scratch, Malaysian ones were interesting, big fan of a Rendang Daging but takes a fair few hours to cook. I'm guessing most people won't find a home made curry that impressive but I use to quite enjoy it, particularly the more unusual ones, was pretty simple but rewarding, especially if you make your own pastes and things.

Risottos are pretty hard to get right, me and a flat mate made a cracking one back in halls - we had to substitute the wine with rosé vermouth... believe it or not it tasted beautiful, awful consistency though... was like slop :lol:

Really want to get back into me cooking when I move back to uni... had a pretty lazy year last year but the year before we were always trying new dishes, have amassed about 30 different jars of spices and had some fresh herbs growing in the garden for a while

Made quite a few random things as well.. although this is moving away from the "fine cuisine" kind of area :oops: shepherds pie curry style was a good one, with proper pilau style mash and a beef mince madras... I think I'd ran out of rice at the time!

x2 It doesn't look that appetizing. I think it looks like a few of those Muller rice pot things on a plate.

I can understand why matey up there^ thinks it doesn't look appetizing but I've tasted good risotto and no it doesn't look amazing but my god when it's been made well it tastes fucking sublime <3

I don't cook, but I enjoy a home/well made dish. My dad cooks all the meals in my house and sometimes we don't have a huge array of ingredients so he'll experiment and literally chuck some random shit together, make some strange sauce etc and serve it up. Nine times out of ten it tastes great!! Although when it comes to trying to recreate it, he can't remember everything he used, so it's always a bit different :lol:

Risottos do take a but of practice, I cook one at least once a week cause I like em so much!! Also I have noticed when you order them in different resutraunt they are always different, some are quite sloppy and some have a firmer consistancy. I guess it's all down to personal preference, I like mine quite loose.

As for the curries I do enjoy making my own. Mostly thai curries as there is not a huge need for hundreds of different spices like you need with many indian curries.

Have you got any links to some good recipies for any curries you have made or are they all off the top of youre head??

All the usual Indian ones are off the top of my head nowadays, but for more interesting ones i've been using this, made maybe 30 out of this so far and they've all been really good so far :thumbsup:

You'll find the secret to a good risotto is finishing it off with a spoon of creme fraiche at the end, stir it in and enjoy.

Also, grated parmesan gives it a firmer consistency and plenty of pepper ftw.

I thought there would be a chef on here somewhere....

I prefere to use marscapone rather than creme fraiche as i'm not a huge fan of creme fraiche. Have used parmesan also but find it can make it a bit salty for my taste, probably down to the fact i'm not using decent stock though (use cubes), always use it all up in soups if I do make any after a roast!!!

What are you using as a base before you put the stock in ?

Usually onions (white or shallots), garlic, Ex Virgin Olive Oil, sometimes a little celery and then white wine, usually just a glass of whatever i'm drinking with the dinner. I sometimes omit the garlic and replace it al the end with roasted garlic as I like the flavour of it!

I've never really used thyme in risotto, will give it a go though. Also never really put zest in at the beginning of a dish, usually at the end but I will try that too!

I'm a lover of proper food tbh, the sort of shit featured on man vs food rather than master chief. I've got a mate that can knock up a curry out of pretty much any thing left in the kitchen and no matter what he chucks in it's always proper nice. He even knocked up spicy fish chips and pea's recently that was on another level, the lads got some proper skills yet all he wants to do with his life is sit around snorting m-cat :lol:

If you wanna make proper mushy peas for fish 'n' chips, just get some peas, nuke em, add some butter and cracked black pepper, blitz it and job's done.

I follow the school of 'throw bare shit in a pan till it taste nice' school of cooking.

simple answer if you are into food in a big way aim for EPIC MEAL TIME! (youtube it as i can't be arced to link and there are so many good vids its tough to choose!)
