In answer to two of your questions, yes thats a standard early Coupe S interior. There was a choice of two colours depending on the exterior colour of the car. Mars Red, White and Black seemed to get the red 'Dennis the Menace' interior, Whilst some of the other colours, such as Comet Blue, Rallye Yellow and Silver had the silver striped equivalent.

The twin lamp grille with a red stripe is also standard equipment. Being a C reg like mine, the inner lamps should actually be foglamps. Mine never worked, so I swapped them for the later spot lamps fitted to later Coupes

The bolster should be the same as Mark2 Golf GTi if that widens your search. I've re-bolstered one of my seats using the foam from a Golf.

I can't help you on any of your other questions, but looking forward to seeing your updates :-).
