How do I restore the polished lip on my wheels have been eaten by road salt.....

You will need to re-polish them BUT - when you polish aluminium, you remove the protective anodised layer, leaving it open to corrosion - as you have found out.

Depends how bad they are. If they are really bad you may need to start with wet and dry. If they aren't to bad some polishing mops and compounds might work. I presume you've already tried metal polish by hand?
