Can anyone give me a clue where to buy these as euro car parts do not seem to stock them anyore, also can someone clarify that it is a good idea to replace all these while replacing shocks and springs

If you can get genuine, the consensus is to do that as they tend to last better. Peteg40 (on here or over on polog40.co.uk) can supply bump stops. They're only a few pounds so worth doing if the suspension is in bits

It will be so would rather refresh the lot while it's off, cheers for that I will message him and i have heard of people having problems with cheap top mounts so would rather buy oem ones can I just buy them from vw ? At least that's one problem sorted

I'm not sure you can get them from VW actually. I seem to remember them being sold as G40 top mounts (no different). Failing that, a good quality brand like Febi would do but they are almost a serviceable part on the old polos

Search for Febi 5492. It's a complete kit with mount, bump stop, dust cover and threaded nut.
