Went to put my rear seatbelts back into my mk2 but they don't appear to be working anymore.

They can retract the slack in the belt, but I cant pull anymore out.

Any ideas's?

Are you trying pull them out while they are out of the car?

This can be tricky but you need to hold them at just the right angle and pull them out very gently. Otherwise the emergency stopper thing (forget the proper name) will activate and stop the seatbelt from moving.
