What's the benefits of a knife edged crank?

It's more of a service they can do to your existing crank I believe, something to so with the counter weights?

Reduces rotational mass,

Engine revs up allot faster but reduces engine braking ability.... same as lightening the flywheel.....

Good for race cars...

Does the knife edging also flick off the oil more easily again reducing rotational mass. In big racing engines, windage trays and dry sumping can mean a gain of some horsepower simply by keeping oil draining down through the engine to a minimum.

Lightening as above but also reduces the surface area and thus resistance as the crank passes through the oil. During the process the crank may also be more finely balances too (no that it's likely to be way out from factory anyway). Probably no noticeable difference on a road car but if you're trying to squeeze every last bit out then go for it.
