My mk2 breadvan needs to have all the seats and interior side panels replaced. What would be a straight fit for both of these to be replaced? Any ideas? 

will have to be polo stuff if you want it all matching, various front seats fit or can made to fit , but no door cards or rear seats fit from other cars

I put front seats and rear bench from a mk2f/mk3 into my mk2 breadvan as the stock ones looked like they had been fingered by Wolverine. Straight swap. Real simple too. Just a few bolts. Door cards from the mk2f/mk3 were a slightly different shape. Wouldn't fit. Currently in the process of making my own with some marine ply. Cut to shape, looking to put some riv nuts in to attach them. Again, not too difficult, just having to take my time around work and stuff. 

Legend has it that early corrado seats fit but they are a bugger to find. Good luck dude.
