I'm reluctant to start just ragging on things so could anybody tell me the correct procedure to remove the rear seats from a mk2 saloon?

The base is the same as your breadvan, flips up from the back and two huge screws on the hinges. The back is hooked through the metalwork, with the base out of the way, it should just push upwards. It's been about 10 years, but I think there's 4 hooks in the corners, and they need to move about 50mm. Pretty sure you can see them from inside the boot, they're fairly substantial.
