did any of the mk3 coupes have opening front quarterlites or rear quarterlites

You mean the windows? As far as i'm aware, no. I was looking for some of these a few years back and nowhere sold them!

id have thought they would have fitted the mk3 doors

No UK spec MK2's ever got them,none ever as far as i know. They'd look great on the right spec,but it'd be quite a job to adapt some MK1 Golf items - you'd have to know what you're doing,just to be in with a chance. Making opening rear quarters should be far easier..
