I rolled my mk3 forward with the bolts loose on my ARB Blocks and then used that to set the position - is there a way to get it dead on?

Or shall I just wait and getting the tracking done and tie rod replaced at the same time and let the garage do it??

just get it tracked up. i did mine on the floor and my tracking was 10deg toeing in!

That's what I did too, although my tracking was still spot on after fitting, best to be sure though

Mine was too - I took it down, assuming it would need tracking but not really finding much wrong with the way it felt - and the guy said it was bob on. The garage is a partner of a trusted place I go to (who assisted me in fitting my front suspension on a quiet day, free of charge!) so that was good enough for me.

I was surprised and a little skeptical, so I chatted about how some people (pinches) reported wild outages in tracking after doing the same thing pretty much, and he said 'well they mustn't have done it as good (pinches) as you, then'

Last time i removed mine,i re-torqued them with the weight of the car on the ground,hence the brackets almost as far forward as they'll go. Now I've had to change the gearbox (yet again),i know that having torqued the bolts in the same way,the arb is sitting in the same place,and thus the tracking is likely the same. Course,this doesnt work if the brackets were last fitted by someone else,who used a different technique,but its quite popular and is how Haynes suggest.
