I've seen a few people on here say that their insurance company doesnt mind them doing non performance enhancing mods to their car and wont charge any extra for them.

Which insuance companies is it that do this?

People like flux will often put you on a "modified" policy where most cosmetics etc are fine as long as you let them know about it. You may pay a premium for being on this type of policy however.

For instance.. i'm not paying £500 all in with Flux for insurance on my polo GT with ALL my mods declared, including a long list of engine tweaks!

Other companies like HIC will ofter a similar service.
