What tyre pressures does anyone suggest because when I fill my tyres anything from 32 to 40 looks alright. I'm assumming the pressures need to be higher than those quoted in the handbook when you're running lower profile tyres?

Nope, pressure is always the same unless your running stretched tyres. Then they need to be slightly higher to keep the tyre seated. 32-40PSI seems a bit high to me. On a normal tyre I'd expect to run between 28-30PSI. I normally run 32-34PSI with stretched tyres.

Make sure you don't over fill them with air because they will bow out in the centre and it will give you less grip and they will wear out the centre part of the tread quicker. If in doubt, its usually in the drivers door check or inside the petrol flap what tyre pressures your car should run. If its not there it should be in the owners manual.

Normally you should run around 30-32 psi in a tyre but as Kam says up that slightly for a stretched tyre.

You don't need to put more into a lower profile tyre, you've got to remember that this is pressure and not amount of air going into the tyre.
