I have searched but cant find it posted but i remember something said about classic Mini subframes fit into a mk3 polo.

Is this true? If so what modifications would they need?

I'm guessing a lot of fabrication otherwise everyone would have done it!

Yup, classic Mini standard seat subframes are completely different to Mk3 Polo ones.

There are no rear runners, the front mount isn't in the middle (instead there is one on each side).

If you want to fit buckets I'd recommend getting a cheap set of normal mk3 front seats and seeing if they can be modified to fit.
