If i were to remove the back seats from a car, blank out the rear windows and make it into a Van, would you have to 're-register' the car as a van?

Also, if you did, would you find it hard to get insurance for said van?

As far as I am aware you would not need to re-register the car as a van, however it is best to check with DVLA.

This is something that we quote for quite often and have no problem getting competitive quotes so other companies should be able to do the same.

No, it will always be a modified car.

For private use, van isurance is normally 25-50% more than for an equivalent car. I know this from the experience of paying £100 more for a Rascal than for a Polo Coupe.
